Ingredients

  • 1 lb chicken
  • 1/4 cup neutral cooking oil
  • 1 inch ginger, crushed
  • 7 cloves garlic, crushed
  • 1/2 red onion, sliced
  • 1 tomato, sliced
  • 2 pieces sliced tamarind
  • 2 jalapeño peppers, sliced
  • 1 stalk lemongrass, roughly chopped + crushed
  • 2 tsp turmeric powder
  • 1 can coconut milk 
  • salt to taste

Serve with:

Traditional: Serve with rice + Sambal Belacan.

Let’s get cooking:

  1. On medium high, heat oil in the skillet for 2 minutes. Stir fry ginger, garlic, onion, tomato, tamarind, jalapeño, lemongrass, and turmeric powder for about 3 minutes, or until fragrant.
  2. Add chicken and let it cook halfway through, about 5 minutes.
  3. Add coconut milk to wok. Stir and simmer for about 15 minutes. Salt to taste.
  4. You’re done! Serve with some of our suggested favorites. Enjoy!
