Ingredients
- 1 lb chicken
- 1/4 cup neutral cooking oil
- 1 inch ginger, crushed
- 7 cloves garlic, crushed
- 1/2 red onion, sliced
- 1 tomato, sliced
- 2 pieces sliced tamarind
- 2 jalapeño peppers, sliced
- 1 stalk lemongrass, roughly chopped + crushed
- 2 tsp turmeric powder
- 1 can coconut milk
- salt to taste
Serve with:
Traditional: Serve with rice + Sambal Belacan.

Let’s get cooking:
- On medium high, heat oil in the skillet for 2 minutes. Stir fry ginger, garlic, onion, tomato, tamarind, jalapeño, lemongrass, and turmeric powder for about 3 minutes, or until fragrant.
- Add chicken and let it cook halfway through, about 5 minutes.
- Add coconut milk to wok. Stir and simmer for about 15 minutes. Salt to taste.
