  • Omsom Soy Garlic Saucy Noodles
  • 1 Tbsp. potato starch
  • 3 Tbsp. AP flour
  • 6 Tbsp. water
  • 1 Tbsp. neutral oil, divided
  • 1 Tbsp. katsuobushi
  • 1 cup of thinly sliced cabbage
  • 1/4 cup bean sprouts
  • 4 to 5 pieces of thinly sliced meat (or bacon)
  • Salt and pepper to taste
  • 1 Egg
  • Okonomiyaki sauce for garnish 
  • Mayo for garnish
  • Furikake for garnish
  • Scallions for garnish

Instructions

  1. Cook the noodles from the Soy Garlic Saucy Noodles, and set the cooked noodles and sauce packet aside.
  2. In a small bowl, make a batter by mixing potato starch, AP flour, and water.
  3. Heat up a large nonstick griddle with 1 teaspoon of neutral oil over medium-low heat, and pour 2/3 of the prepared batter onto the hot griddle. Spread the batter thinly into a large circle with a spatula. 
  4. As the batter starts to cook, start layering the ingredients with katsuobushi, followed by sliced cabbage, bean sprouts, and thinly sliced meat. Pour the remaining 1/3 of the batter on top. With two spatulas, one in each hand, carefully pick up the pancake and quickly flip it. Use spatulas to push the edges of the cabbage to shape it. Push it down to create some space in your griddle.
  5. With 1 teaspoon of neutral oil, add cooked noodles on the griddle, then stir-fry until the noodles are loosened with two spatulas. Drizzle Soy Garlic sauce packet on the noodles and toss to coat.
  6. Spread the noodles flat, similar to the other pancake size. Then, using two spatulas, carefully transfer the okonomiyaki on top of the noodles. Put it down to create more space in the griddle.
  7. Heat the remaining neutral oil and crack the egg. Cook the egg and spread it to the size of the Okonomiyaki. Before the egg is fully cooked, place the Okonomiyaki on top of it. Then, when the egg is fully cooked, flip the Okonomiyaki one more time with two spatulas.
  8. Garnish with Okonomiyaki sauce, mayo, furikake, and a generous amount of scallions.
