Soy Garlic Saucy Noodles

  • Omsom Soy Garlic Saucy Noodles
  • 1 pound raw shrimp, peeled, deveined, and finely chopped
  • 3 scallions, chopped, plus more for garnish 
  • 1/2 Tbsp. soy sauce
  • 1/2 Tbsp. fish sauce
  • 1/2 Tbsp. mirin
  • 1/2 tsp. kosher salt
  • 1/2 tsp. ground pepper
  • 1/2 tsp. sugar
  • 1 large egg
  • 3 Tbsp. potato starch
  • 4 cups vegetable oil
  • 1 Tbsp. mayo
  • 1 tsp. chili crisp

Instructions

  1. Make the noodles from the Soy Garlic Saucy Noodles, using only half of the sauce packet. Cut the noodles into shorter strands by cutting them a few times with scissors. Set them aside in a large bowl. 
  2. In a medium-sized bowl, add finely chopped shrimp, chopped scallions, soy sauce, fish sauce, mirin, salt, pepper, sugar, egg, and potato starch. Mix well, using chopsticks, until the mixture gets frothy and slightly thickened.
  3. Scoop about 1/3 cup of the shrimp into the bowl with the noodles. Using clean hands, pat and shape the ball so the noodles stick to the shrimp filling completely. Repeat the process until you have 5 balls.
  4. In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (180°C). Working in batches, fry the shrimp balls for 2 to 3 minutes, or until the internal temperature reaches 145°F (63°C). Once the shrimp balls are done, transfer them to a sheet pan with a wire rack.
  5. Make chili crisp mayo by mixing mayo and chili crisp. Serve immediately with chili crisp mayo alongside for dipping. Garnish with more scallions.
