Ingredients
- 1 Omsom Thai Krapow Starter
- 1 half can of SPAM® Classic, cubed ½ inch
- 2 eggs
- 4 scallion stalks, sliced thinly (save some for garnish)
- ½ cup mozzarella, shredded
- 4 sheets of rice paper
- mayonnaise

Prep your protein!
- Pan-fry cubed SPAM® Classic in pan on medium-high until crispy for about 3-4 minutes. Set aside.
Let’s get cooking!
- On medium-high heat, place rice paper in dry pan.
- Spread Omsom sauce on rice paper. Crack egg on top and use chopsticks to mix, spreading mixture to edges of rice paper.
- Top with mozzarella, scallions, and cooked SPAM. Cook for one minute, until cheese is melted and egg is cooked through.
- Fold rice paper in half and remove from pan. Top with mayo, cilantro, and reserved scallions. Cut into triangles.
