Mushroom Krapow

This wickedly spicy + sweet dish is here to kick your lunchtime up a notch

Equipment

  • large skillet

Ingredients

  • Pepper Teigen's Krapow Starter
  • 16 oz. mushrooms (cremini, button, oyster or mixed)
  • 2 tbsp. neutral cooking oil
  • ½ small yellow onion, sliced
  • ½ cup green beans, trimmed + cut into 1-inch pieces
  • 1 cup basil leaves (Holy or Thai basil is traditional, but Italian works too!
  • 1-2 small sweet red peppers or ¼ red bell pepper, thinly sliced (optional)
  • 1 egg, fried Thai-style (optional)

Serve with:

Traditional: Serve with white rice, topped with Thai-style fried egg.

Mix it up: Serve with lettuce wraps and sliced cucumbers.

Prep your mushrooms:

  1. Clean mushrooms by lightly removing dirt with a damp paper towel. 
  2. Dice into ½ inch cubes.


Let’s get cooking:

  1. In a pan over medium high heat, heat oil. Add mushrooms and let brown undisturbed, about 3 minutes. 
  2. Toss mushrooms and continue to sauté until deep brown, about 5 minutes.
  3. Add the onions and green beans. Cook until they’ve softened, stirring often, about 2 minutes.
  4. Turn heat down to medium, add the Omsom starter, and stir to evenly coat everything in the skillet. 
  5. Add red peppers (optional) and roughly hand tear the basil into the skillet. Turn off heat and stir to wilt the basil.
  6. Salt to taste and top with fried egg (optional).
  7. You’re done! Serve with some of our suggested favorites. Enjoy!
