Sisig Sauce

- Omsom Filipino Sisig Starter
- 14 oz. firm tofu
- ½ medium red onion, diced
- 1 tbsp. neutral cooking oil
- 1 tbsp. mayo
- salt and pepper
- 1 egg (optional)
For tofu salt brine:
- 4 cups water
- ¼ cup salt
Serve with:
Traditional: Serve with garlic rice or white rice, and top with sliced chili or scallions.
Mix it up: Serve with sauteed greens.
Instructions
Try this hack for extra crispy tofu!
- Cut tofu along the short side into ¼-inch strips.
- Bring 4 cups water and 1/4 cup of salt to a boil in a small pot.
- Once boiling, turn off heat, add tofu, and let soak for 10 minutes.
- Drain water and pat tofu dry with paper towels.
- Dice into cubes.
- Season tofu lightly with 1 tsp. each of salt and pepper.
Let’s get cooking:
- Heat oil in the skillet over medium high heat. Add onion, reserving a handful for garnish, and cook for 3 minutes until soft.
- Add tofu to skillet, turn heat up to high and fry, stirring occasionally, until evenly browned, about 8 minutes.
- Turn heat down to low, add the Omsom starter, stir, and season with salt and pepper to taste. For the brightest flavor, try not to boil the starter.
- Crack an egg into the warm pan, and stir to quickly cook the egg.
- Turn off heat, add mayo, and stir to combine.
- Finish with the reserved onion.
- Serve hot - preferably sizzling! Serve with some of our suggested favorites. Enjoy!
